BIBINGKA
Bibingka is basically ground rice and water. It is generally called kakanin from the word kanin, meaning cooked rice. Though the base recipe is practically the same as puto’s, sans the embellishments, its manner of cooking is what gives the rice cake its unique texture and aroma.As a common merienda in Filipino culture, the rice cake comes in a wide variety. The fine-textured bibingkas we find in commercial establishments today are quite different from the previous iterations, which were much denser.
SAPIN-SAPIN
Sapin-sapin is a sticky rice cake from the Philippines which originated in a northern province called Abra. From the root word 'sapin', a Tagalog term meaning “blanket,” the name pertains to the vibrant multi-colored sheets or layers which is the main characteristic of this rice cake.A treat as sumptuous as sapin-sapin is no longer surprising when ways of cooking it is already spread down to other provinces, and thus now being enjoyed by many.It has been considered as one of the most favorite delicacy of Filipinos. At present, different variations and versions of Sapin-sapin are being served in fast foods, special events and even parties.
